Organic Spelt, Cherries, Blue Cheese, and Walnuts

  • 250 g organic spelt
  • 100 g cherries
  • 100 g blue cheese
  • 2 handfuls of baby spinach
  • 1/2 red onion
  • 50 g walnuts
  • Extra virgin olive oil
  • Lemon juice

    PROCEDURE

    1. Cook the spelt in boiling salted water for 30–35 minutes. Let it cool.
    2. Quarter the pitted cherries and cut the blue cheese into cubes. Finely chop the red onion and roughly chop the walnuts.
    3. Prepare a vinaigrette with lemon juice.
    4. Add the baby spinach to your salad, dress it, and enjoy it cold. (Optionally, you can add some chopped parsley.)
