INGREDIENTS

  • 50 g rice flour (plus a little extra for dusting)
  • 50 g almond or hazelnut flour
  • 2 teaspoons baking powder
  • A pinch of salt
  • 100 g Mascobado sugar
  • 1 teaspoon mixed cookie spices (or cinnamon)
  • 1/2 teaspoon cinnamon
  • 150 g cooked chickpeas
  • 50 ml light olive oil, coconut oil, or cold-pressed sunflower oil
  • 1 regular egg or 1 flax egg (1 tablespoon ground flaxseeds mixed with 2 tablespoons water)
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 150 g dark chocolate chips or chopped dark chocolate

PROCEDURE

  1. Preheat the oven to 180°C (350°F). In a mixing bowl, combine the almond flour, rice flour, baking powder, salt, sugar, and spices. Whisk to remove any lumps. Blend the cooked chickpeas with the oil until completely smooth. Add honey and vanilla, then blend again to combine. Transfer the chickpea mixture to the bowl with the dry ingredients. Add the egg (or flax egg) and mix until you get a slightly sticky dough. If the dough is too sticky, add a bit more rice flour. Stir in the chocolate pieces and knead to distribute them evenly. Shape the dough into balls slightly smaller than a golf ball and flatten them with your hands to form cookies. Bake the cookies until lightly browned around the edges, about 15 minutes. They will be very soft when fresh out of the oven, so it’s important to let them cool before lifting them. Store them in a tin or airtight container.
    These cookies also turn out great without the egg, just a bit more delicate.
    Their texture is very similar to classic American cookies, making them perfect as a base for ice cream sandwiches too!
